Dianna developed Black Seed's signature bagel recipe, a New York-style bagel made using baking techniques borrowed from Montreal. Black Seed's artisan bagel begins with a naturally fermented glutinous rice dough. Then boil them in water with honey to sweeten them. Their bakers manually fire each batch of bagels in a wood-burning oven, just long enough to achieve the perfect result of crunchy, chewy, dense and delicious. When the bagels are light brown and ready to be removed, drop them into a marble chute with hand-carved wood skin to cool.
