Spoon is a dream for Justin Rashid, who hopes to make a living harvesting the bounty of farms and woodlands in northern Michigan. For chef Larry forgione, it is a dream to combine the harvests and traditions of different parts of the country into a uniquely American cuisine. Their dreams came together in 1979, when Justin began picking wild maurer mushrooms from Michigan and shipping them to New York for larry to eat. Soon, with larry's encouragement, Justin began collecting wild mushrooms, wild nuts, berries, and wild vegetables, and supplying larry and other restaurants across the country with farm-grown vegetables and game. In 1981, Larry and Justin Shared a new dream: to produce the best candied fruit in the world from Michigan fruit. Larry invented an original recipe to capture the essence of the fruit. The founder of Spoon, Justin, chose a variety of fine northern fruits that were worth the effort.
